52 Weeks 52 Tests - Week 13 - Crocodile Soup

Work is pretty busy these days and I have not had time to plan for a structured experimentation. Nevertheless, there is always a way to get out of the comfort zone, even close to home. Especially, when you live in South East Asia. 
I had already spotted several weird foods you can find in Singapore, but never sampled a "delicacy" I saw on a few seafood billboards around town: crocodile. 


Singapore was originally a very swampy island, and salted water crocs can be spotted from time to time in the wetlands... Crocodiles have always been residents of Singapore. Heck, there is even a Crocodile brand clothing company, not dissimilar to a famous french one...

Anyway, back to our topic: I had to try food with some crocontent.
With my equally adventurous friends Emma and Yohann, we headed to a Geylang seafood restaurant on Sunday evening to sample one of those dishes.



Plenty of choice, but lured by the ressuring "Like" thumb sign on the menu, we opted for the "paw" stew...

A Carlsberg pint later (for courage), the stew landed on our table, dressed like your usual claypot soup:


We spent some time trying to understand what was crocodile, and what was everything else (spring onions, onions, mushrooms, etc...)

The following has French comments, but my reaction at : will give you an idea of my appreciation of the dish...




It was slimy, bony, with a weird taste. I'm not trying this again. Or maybe proper crocodile flesh, like a crocodile fillet or some'. Croco paws were already intermediate level.

Disclaimer:
The crocodile you can eat at the restaurant come from a farm and is not an endangered species. Yet the door lady told me that crocodile was good for lungs. I do not believe in these TCM claims on the virtues of rare or wild animals to cure such or such ailment. I picture too easily a dodgy, convincing Chinese merchant totally making a claim up hundreds of years ago just to get rid of his stock, and the claim then propagating through word-of-mouth until integrated in popular culture...
Some TCM beliefs do have a very negative impact on the biodiversity, and accelerate the extinction of entire species such as tigers, rhinos, pangolin, and sharks. 

In particular, I'm shocked that shark's fin soup is still not yet banned from Singapore restaurants. Shark fishing has devastating effects on the equilibrium of the marine ecosystem, and it could have dramatic effects for the humans as well. I invite you to look at the following 5 minutes documentary on the effects of shark finning, to never eat shark fin, not to give any money to restaurant offering shark fin on the menu and to spread the word.

52 Weeks 52 Tests - Week 7 - Hypnotherapy (Part 1)

As a western kid, and one from the nation of Pasteur, I have been loaded with antibiotics in my youth, for all sorts of conditions. I deeply believe that whilst it may have saved me from certain complications, it has also left certain fragility in my organism. 

Like many people I don't like going to doctors and rather prefer not to fall sick in the first place. Over the years, I have therefore observed what works and what does not in my lifestyle. Besides paying more attention to what I eat, I have developed an interest in alternative medicines, yet have not tried anything at all, besides maybe, diffusing some essential oils in my flat... 

It is only natural then that some of these medicines make it to my #52W52T challenge!


This week, I had a first consultation with Nisha Jhiangani, from Mind Wellness, about an hypnotherapy treatment. I have been fascinated with hypnosis for a long time, and recently my business school friend Mustafa turned into HypnoMus and stopped auditing for KPMG to dedicate himself to his passion, and now performing comedy hypnosis shows on stage in Colombia. One more reason to pick my interest and get started, somehow...I guess... 



Nisha asked for the main reason for me coming to see her, and so (besides the sheer pleasure of experimenting) I named "stopping my casual smoking completely" as a pressing concern, which also one of my objectives for 2015. I also mentioned excessive blushing / sweating in social presentation contexts as another pressing concern. I'm probably going to focus on that as I sense that there are somatic causes to this that would make for a most interesting treatment topic. 

Nisha ran me through the hows and whys of hypnosis, highlighting that: 
  • contrary to misconceptions, we all experience hypnosis regularly, like for instance when we are so focused and immersed into driving that we eventually miss a turn. 
This video helps to understand more about how hypnosis leverages the subconscious minds to make suggestions. 


She also highlighted the following:
  • hypnosis aims at treating the root causes (the immersed part of the iceberg whose emerged part are the symptoms. 
  • hypnosis is not psychotherapy, and one has to come with a serious problem it really wants to solve for seeing a chance of success. 
  • Patient keep control during an hypnosis session
  • It is better not to over-analyse what was said during the session so as to maximize the power of suggestions (how to write a post without hypnotherapy if I can't analyze :@) 
Anyway, I signed in for a package of 5 sessions, which is the recommended time to solve typical problems... It is pretty expensive, but to solve a really annoying personal issue, I don't mind!
At this point, I am pretty excited for my first consultation that will happen tomorrow.

************** Update from February 12th ************** 

So, I had my first therapy session yesterday...
I was reminded that it is better not to analyze what happened during the session and let the effects sink in for better long term results. All I can tell you is that it was quite an experience to go through...

As a consequence, I won't tell you much at this stage, and Part 2 will come later this year then, when all sessions are behind me and a cold headed assessment can be made.

In the mean time, let Pharrell close your eyes and let him hypnotize you, he will make your storm feel sky blue.

52 Weeks 52 Tests - Week 4 - Florida, Chicken & Waffles, Key West and sipping Margaritas at South Beach Miami

OK, 4th week of the year and 4th week of trying new stuff.
After 24 hours of plane waiting, plane flying and plain boring, I landed in Orlando, Florida. 
I took the chance of the annual kick-off with my company to take a few extra days in the Sunshine State, ahead of the global corporate mass.

Every new place you go to normally comes with an healthy amount of discoveries and it's just not possible to list them all, so I'll just focus on few of them for now. 

Dinner time was coming after a whole day in St Petersburg, Florida, wandering in awe in a brilliant Dali + Picasso exhibition, at The Dali

I badly needed a USA grade beef steak and Adam suggested we tried getting our protein fix at Z-Grille, who has excellent meat, a nice setting, veggies choices, and even, Chicken & Waffles. 

Wait, whaaaat? Chicken & Waffles ??? Together in the same dish??? You must be FFFing kidding me. WHAT IS THAT? 
Like struck by lightning, I knew I could not back down and not try this dish for the #52W52T challenge... 

So here it comes, the original Chicken & Waffles!

The Original Chicken & Waffles

Interestingly, Chicken & Waffles is a classic dish in the Southern American Soul Food cuisine, a form of cuisine derived from the various influence of Afro-American tastes that blended in the south.

Like most chicken in the USA, it came deep fried, which I am in general not fan of, but this time, the cornflake & sage frying coating made it more interesting. The waffle underneath was a bit soggy, I guess because it was covered by an onion & bacon sauce, and lying on top the grits. Now, grits is another new food for me, a sort of polenta made of corn. This grits is a cheddar one but I did not find it too cheesy and a bit on the bland side. The pink peppercorn ice cream was funky! Very buttery but it added a more refined fragrance to the dish.

All together, this Chicken & Waffles was not incredible, but very filling, American-sized.
I was actually quite happy to help Adam finish his one pound rib eye...

Just a lot of beef

After St Petersburg, I headed straight to Key West, the southernmost point in continental USA, a tourist mecqua, and a very clean, chilled tropical atmosphere.







After two half days and a night in Key West, I jumped in my rental Chrysler again and drove straight back up north. to Miami: just for the sake of driving into Miami and grab a drink at South Beach.



Miscelaneous comments and notes to self about Florida and the USA

- Vasectomy specialists advertise on huge billboards by the highway.
- Mc Donald's are literally at every gas station, and only terrible fast food choices are available. 
- Debt collectors are everywhere on the FM stations and their ads are the closest thing to a total brainwash to exist in the universe.
- You can buy Visa and Mastercard cards from a self-serve shelf, ready for you to top-up. Never saw that before...
- SiriusXM satellite radio rocks, saved my long hours of driving...
- Fuel is cheap (20$ for full tank!) but tanks are small.
- People in the USA are huge in all X, Y, and Z axis. They are also so vocally enthusiastic for basic things that it's almost hard to believe, especially in comparison with Singapore where waiters and store staff barely speak to you at all.

52 Weeks 52 Tests - Week 1 - New Year's Eve in a Rustic, Remote Location

I had nothing planned for this NYE, with most of my friends returning from our remote hometown of Raon l'Etape to their bigger cities and multiple party options. I was already dreading a comfortable, yet very boring eve made of TV watching with my parents... To my surprise, I got a call from my good mate Mathieu at 5 PM, who proposed to spend NYE in an uncommon location: a refuge chalet in the Vosges Mountains.

3 hours later, we jumped in our cars for a 40 minutes of frozen drive up to the mountain pass, where we parked. We wore our boots, warm garments, hats, and grabbed our backpacks packed with food & (mostly alcoholic) beverages, lights and headlamps, and even sleeping bags for some.

After 50 minutes of a sweaty night walk up the mountain, in a gradually increasing amount of snow (up to 50 cm at the top), we reached the small wooden refuge, open and ready to host us for a good night.

We made fire in the chimney to bring the temperature from 5 deg Celsius to a more bearable 15 degrees, and started eating our basic meals that tastes like a 5 star fine dining in this context: crisps, foie gras, pate, sausages, and washed it all with a nice sequence of beer, wine and champagne. 


After playing some games and cracking dirty jokes, we went outside to for the midnight countdown and watched the colored lights from the fireworks shot from the valley spread in the layer of cloud that separated it from us. We shot our own little rockets and screamed at will for the pleasure of hearing our voices echoing on the snowy rolling hills.



A pleasure that only countrysides can offer, and a brilliant, impromptu night of camaraderie.

The World's Weirdest Business Card

I received this business card while I was organizing a banking-related event in Singapore with Ubifrance, the French Trade Commission. The person was not on the guest list and was pushing hard to enter the event. Given the UHNW gathered in the 300+ seater room, we didn't leave the guy much chance to get in.



What in the world could make someone feature 8 different email addresses on one's business card?
The back of the card is absolute gold, featuring displays of the most absurd gibberish, that struggles way too hard to demonstrate this guy's peculiar a mastery of innovation consulting.


A card like that certainly captures attention but could it possibly attract any lead coming from a sane human being?
I will keep this card as a collector, for sure, as a reminder to never get too over the board.

Rhinoceros or Deer Cooling water: dunno what that is or worse, what it contains, or how Rhinos extracts can cool you down.

When you have been on holidays in the mediterranean and some of your days were ruined by insanely irritating jellyfish stings on your skin, the last thing you want is to put them in your throat
Fries + Ice Cream??? Are you kidding me??

Ça se passe a Tianducheng, non loin de Shanghai. Des promoteurs ont voulu reconstruire un Paris a la chinoise. C'est ambitieux, sauf que...c'est vide, et assez moche en fait. Attention, 1, 2, 3, immersion.

Un dessert aux champignons?

La semaine dernière, à l'occasion d'une conférence organisée au magnifique Shangri-La Hotel, je me trouvais fort perplexe face au chariot des desserts lors du buffet. Des couleurs étranges, des formes inhabituelles, bref, rien de tout à fait rassurant pour finir son déjeuner sur une note de douceur... Je pense que vous serez d'accord avec moi si j'écris que lorsqu'on ne s'est pas (trop) trompé dans ses choix pour les plats précédents, le choix du dessert revêt d'autant plus un caractère solennel.

Me voila donc à hésiter, et tout particulièrement devant une grosse soupière en porcelaine, contenant divers ingrédients difficiles à identifier.
Un Singapourien de passage au chariot me servira donc de guide. "C'est un dessert!"...Merci, mais encore? "It's mushrooms". Ah d'accord. Attends, quoi???!! "Mushrooms???", "Yes! Very good! With red dates and longans !, try it!".

J'inspire une deuxième bouffée de perplexité et je me lance.
Voila à quoi cela ressemble dans la tasse...


Bon alors au goût, ce n'est pas terrible. C'est un peu fruité mais ça ne fait pas très frais. Par contre, je suis très agréablement surpris par la texture des champignons blancs qui sont aussi assez croquants et à plusieurs niveaux, un peu comme si on croquait à pleine dents dans une laitue Iceberg. 

Par contre, dans l'assiette j'avais aussi un morceau de pudding à la mangue qui lui était vraiment délicieux!

C'est un site assez incroyable, qui montre une quantité de statistiques en temps réel et qui évoluent sous vos yeux...Au menu: population mondiale, dépenses de santé et d'armement, déforestation, nombre de vélos produits dans l'année, nombre de mail envoyés...

Jetez-y un oeil, ça vaut la peine...

Chatroulette - Le voyeurisme sympatoche

Chatroulette!
est un site crée par un jeune russe il y a quelques mois et qui commence à faire des émules sur le net...Le principe est très simple: mettre en relation deux internautes équipés de webcams n'importe ou dans le monde, à la façon de la roulette russe...

Alors qu'on peut s'interroger sur l'utilité profonde de ce système (d'autant plus que les personnes restent connectés quelques secondes seulement en général), le côté fun saute immédiatement aux yeux. On se retrouve face à un panel très varié d'internautes aussi curieux que vous. Si on met de côté le fait qu'une webcam sur 4 ou 5 montre un pénis en train de se faire remuer par un utilisateur désireux d'exposer son intimité au jugement du monde par pixel interposés, on verrait presque dans Chatroulette! un hublot sur les hommes et les femmes de ce monde, uni par la même curiosité...

Le premier essai du service promet quelques moments d'hilarités intéressants. En l'occurrence, le fait que ma webcam affiche mon image à l'envers m'a amené naturellement grâce à une cravate semblant retenir ma tête, à jouer le rôle d'un salarié de France Télecom post-burnout. #petitplaisirduweb
